Chicken and Peas in Orange Peanut Cream Sauce

Ingredients
1 Jar Maffé Simmer Sauce
1lb boneless skinless chicken breast cut into one inch chunks
½ cup orange juice from concentrate
¼ cup heavy whipping cream
1 tsp grated orange zest
1 tsp fresh minced ginger
1 tsp fresh minced garlic
½ cup frozen peas
½ cup frozen cauliflower
3 tablespoon canola oil
2 tsp soy sauce (can substitute with 1tsp fish sauce)

Directions

  1. In a large pan, heat one tablespoon of the oil over medium heat. Stir fry the ginger and garlic until fragrant.

  2. Add the remaining 2 tablespoons of oil. Sauté the chicken in a single layer until lightly browned, about 4-5 minutes.

  3. Add Maffé sauce, orange juice, zest and soy sauce. Stir together. Bring to a boil and immediately turn down to a simmer. Add cream, cauliflower and peas. Simmer covered for 20-25 minutes, stirring half way. To thicken further, simmer uncovered, for the last 5 minutes of cooking.

  4. Toss and stir with buttered pasta or serve over couscous and naan bread.
