Lamb Chops in Spicy Pineapple Coconut Peanut Sauce
Ingredients
1 Jar Maffé simmer sauce
6 lamb loin chops (1-inch thick)
8 oz can crushed pineapple in juice
½ cup coconut milk
⅔ cup frozen bell peppers (red, yellow and green)
3 tablespoon canola oil
2 teaspoon soy sauce
¼ – ½ tsp cayenne pepper (adjust according to your heat tolerance)
Directions
In large skillet, heat oil over medium-high heat. Sear the chops on each side without turning to assure even browning, about 3 minutes on each side.
Add jar of Maffé sauce along with the rest of the ingredients to the skillet. Stir together making sure chops get coated.
Bring to a boil and immediately turn down to a simmer. Simmer covered for 25-30minutes, or until chops are cooked through.
Simmer uncovered, for an additional 5 minutes. Serve over cooked Jasmine rice or polenta.
