The slightly sweet, spicy and tangy flavors of this sauce balance the rich and nutty peanut flavor. It might remind you of Thai food, but in a more delicious way. We use a generous amount of fresh ginger and garlic for extra boldness, fiery habaneros for a little heat, fresh lime juice for some tang, and a little sugar for a touch of sweetness. We then simmer, gently, in a rich peanut and tomato base – to create unexpected and tasty flavors.
For a quick meal on weekdays, simmer covered with chicken, meat, seafood, tofu and/or vegetables. You can also use Maffé as a marinade ideally for 24 hours or overnight.
