For an even more exotic taste, add ½ – ¾ cup of coconut milk and simmer covered for a sweeter and creamier Maffé. Turn it into a casserole or stew by adding protein and simmering 6-8 hours in a slow cooker.
For a looser sauce, add stock, coconut milk or water, and then simmer to desired consistency.
To thicken sauce, simmer, uncovered, for the last 5-10 minutes of cooking or add 2-4 tbsp peanut butter (will also give the sauce a richer and extra peanutty flavor).
Adding a dash (or several dashes) of your favorite brand of fish sauce will enhance the flavor. We have found that the Tra Chang brand goes especially well with our Maffé sauce.
For a Thai-African Twist, add 2-3 tbsp. Thai curry paste, ¼ – ½ tsp fish sauce, cut up Thai eggplant, carrots, basil and ½ cup coconut milk, simmer covered for 20-25 minutes, serve over Thai noodles.
For an Indo-African Twist, add 2-3 tbsp. Indian curry powder or paste, bell peppers (red, yellow & green), cauliflower, peas and ½ cup cream, simmer covered for 20-25 minutes, serve over basmati rice.
To make an extra spicy Maffé, add cayenne pepper or several dashes of hot sauce.
