Oven Baked Peanut Coconut Chicken

1 Jar Maffé simmer sauce
4-6 boneless, skinless chicken breasts (6 ounces each)
1 cup coconut milk
1 tsp fish sauce or 2 tsp soy sauce (optional)


  1. Preheat oven to 350°. In a 9 x 13 baking dish, whisk together Maffé simmer sauce, coconut milk and soy /fish sauce (if using). Add chicken pieces and toss to dredge both sides in the sauce.

  2. Bake covered with foil for 20 minutes. Remove foil and turn chicken pieces over. Bake uncovered for an additional 10-15 minutes or until chicken is cooked through (juices should run clear).

  3. Let rest for a few minutes before serving. Serve with mash potatoes and broccoli, spooning the sauce over the chicken and mash potatoes.
