Shrimp in Spicy Coconut Mustard Onion Sauce
Ingredients
1 Jar Yassa simmer sauce
1 lb uncooked shrimp, peeled and deveined
½ cup coconut milk
¼ cup finely chopped parsley
2 tbsp canola oil
1 tsp fresh minced ginger
1 tsp fresh minced garlic
1-2 tsp soy sauce
¼ – ½ teaspoon cayenne pepper (adjust according to your heat tolerance)
Directions
In a pan, heat one tablespoon of the oil over medium heat. Stir fry the ginger and garlic until fragrant.
Add the remaining 1 tablespoons of oil. Cook the shrimp until they just turn pink. With a slotted spoon, remove the cooked shrimp to a bowl, covering to keep warm.
Add Yassa sauce, coconut milk, cayenne and soy sauce to pan. Stir together well. Bring to a boil and immediately turn down to a simmer. Simmer covered for 10 minutes.
4. Add shrimp and back to the pan along with the parsley, simmer uncovered, for an additional 5 minutes stirring gently to coat shrimp with sauce. Serve over rice with fried plantains.
