Shrimp in Spicy Peanut Cilantro Coconut Sauce

Ingredients
1 Jar Maffé simmer sauce
1 lb uncooked shrimp, peeled and deveined
½ cup coconut milk
¼ cup finely chopped cilantro
2 tbsp canola oil
1 tsp fresh minced ginger
1 tsp fresh minced garlic
1-2 tsp soy sauce
¼ – ½ teaspoon cayenne pepper (adjust according to your heat tolerance)

Directions

  1. In a pan, heat one tablespoon of the oil over medium heat. Stir fry the ginger and garlic until fragrant.

  2. Add the remaining 1 tablespoons of oil. Cook the shrimp until they just turn pink. With a slotted spoon, remove the cooked shrimp to a bowl, covering to keep warm.

  3. Add Maffé sauce, coconut milk, cayenne and soy sauce to pan. Stir together. Bring to a boil and immediately turn down to a simmer. Simmer covered for 10 minutes.

  4. Add shrimp back to the pan, simmer uncovered, for an additional 5 minutes stirring gently to coat with sauce. Remove from heat, add chopped cilantro and stir. Serve over rice or with noodles.
