Shrimp in Spicy Peanut Cilantro Coconut Sauce

1 Jar Maffé sauce
1 tbsp oil
1 lb uncooked shrimp, peeled and deveined
1 cup coconut milk
1-2 tsp cayenne (to taste)
1-2 tsp fresh lime juice
¼ cup fresh cilantro, finely chopped


  1. In a heavy saucepan, heat oil to medium-high heat. Add shrimp and cook until they just turn pink. With a slotted spoon, remove the shrimp to a bowl, covering to keep warm. Add Maffé sauce, coconut milk and cayenne to pan and stir. Bring to a boil and immediately turn down to a simmer. Simmer covered for 10 minutes.

  2. Add shrimp back to pan, simmer covered for an additional 5 minutes stirring gently to coat with sauce. Remove from heat, add chopped cilantro and lime juice. Serve over rice or toss with rice noodles.
