Slow Cooker Sweet Potato-Orange Chicken Yassa

Ingredients
1 Jar Yassa sauce
8-10 pieces skinless bone-in chicken thighs
½ cup orange juice from concentrate
1 tsp orange zest
2 large onions sliced into ¼ inch rounds
2 large sweet potatoes sliced into ¼ inch rounds
2 tablespoons oil
1-2 tsp soy sauce
½ – 1 tsp cayenne pepper (for spicy option)

Directions

  1. In a large crock pot, add the oil and spread to coat the bottom of the crock pot.

  2. Layer with the onion slices first, and then the sweet potato slices. Top the sweet potatoes with the chicken pieces. Sprinkle with the orange zest and cayenne pepper (if using).

  3. Add soy sauce and then pour the jar of Yassa sauce and orange juice over the chicken.

  4. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. Makes enough to half into two separate meals.

  5. Serve with Jasmine rice cooked with half coconut milk and half water (1 cup raw rice, 1 cup water, 1 cup coconut milk) and some greens.
