Thai-inspired Peanut dipping Sauce
Ingredients
1 Jar Maffé Simmer Sauce
¾ cup coconut milk
¼ cup unsweetened natural peanut butter (smooth or chunky)
3 tablespoon Thai red curry paste (see notes)
2 tablespoon freshly squeezed lime juice
1 tsp sugar
1-2 tsp fish sauce (see notes)
2 tablespoon finely chopped cilantro
½ – ¾ tsp cayenne pepper (for spicy version)
Directions
In a saucepan, over medium heat, empty contents of Maffé Sauce. Use a flexible spatula or spoon to scrape out all the sauce from the jar.
Add the rest of the ingredients except the cilantro. Whisk together and bring to a simmer. Simmer for 2-3 minutes stirring occasionally. Take off heat and stir in cilantro.
Serve warm or at room temperature. Use as a dipping sauce for satay or spooned over cooked meat. Toss with noodles, cooked and shredded chicken and vegetables and serve as an entree. Thin out with coconut milk, a little oil and water and use as a salad dressing.
Notes
You can find fish sauce in the international or ethnic aisle of large supermarket chains or you can buy it from any Asian specialty market.
Red Thai curry paste can also be purchased from Asian specialty markets. We like the Mae Ploy and Maesri brand. Green, yellow or Penang Thai curry paste can be substituted for red Thai curry paste.
For vegans, vegetarians and celiacs, you can substitute soy and fish sauce with gluten- free and/or vegetarian soy /fish sauce, Tamari or Bragg liquid aminos.
Refrigerate leftover coconut milk for up to a week or freeze for up to 2 months. It will appear separated when thawed; simply stir until smooth.
Tips
This recipe is easily adapted to suit your own taste. Sweeten by adding more sugar. Turn up the heat with extra hot sauce or sambel olek (Thai hot sauce). To thin, add more coconut milk. To thicken, add more peanut butter or simmer uncovered a few extra minutes. Make it your own creation.
Can be made ahead and stored in the refrigerator for up to two weeks. Sauce will thicken up when refrigerated. Heat in microwave for 30 seconds to a minute to loosen, or add a little coconut milk.
