Cooking tips

  • At the end of cooking, add 1-2 tsp freshly squeezed lime juice for a more authentic taste (optional, but highly recommended, to capture the citrusy flavor that Yassa is known for)

  • Add a dash (or several dashes) of your favorite brand of fish sauce for more complexity and depth. Our favorite brands are Tra Chang, Squid, Tiparros and Golden Boy.

  • To tighten sauce, simmer uncovered, for the last 5-10 minutes of cooking. Sauce will thicken as it cools.

  • To thin sauce, add stock or rinse jar with a little water and add to pan. Simmer to desired consistency.

  • Want extra onions? Sauté 1-2 sliced whole onions in 1-2 tbsp. of oil until caramelized. If also adding protein, remove onions from pan and set aside. Sauté protein until cooked, add the caramelized onions back to the pan, then add the Yassa sauce, simmer covered for 15-25 minutes.

  • For a spicier taste, add chopped up habaneros, serranos or jalapenos. You can also add several dashes of hot sauce to the finished dish.
